I made myself lemon spinach fettuccini with chicken, and it was pretty good for as stupid simple as the sauce base was..

Tasted spring-y and bright ASF too. 👌

I had some picada steak that had dried out a little in the packaging, so I marinaded the shit out of it with soy sauce and mushroom bouillon for an hour. It ended up going into beef+broccoli with sauteed bell peppers over some plain white rice.

Side note: You can tell the meat was kinda old, but it was still delicious and cheaper than Chinese takeout.

eating leftover lomo saltado right now it's really good and has a good balance of nutrients, all you do to make it:

1. start by marinating thinly sliced beef in a mixture of soy sauce, vinegar, garlic, and cumin for at least 20 minutes.
2. In a hot skillet or wok, sauté the marinated beef until it's browned on all sides, then set it aside.
3. In the same skillet, stir-fry sliced onions, tomatoes, and bell peppers until they're tender yet still crisp. add the cooked beef back to the skillet and toss everything together.
4. finish with a splash of soy sauce and a sprinkle of chopped cilantro.
5. serve hot over rice or with a side of crispy french fries or you can always cook and add the fries in step 3

Teaching myself how to make Guisado Verde and as much as I love verde sauces, tomatillos are so fucking weird.

I feel like I'm husking something that will kill me, as opposed to working with the usual tasty nightshade family. On that note I did plunk in a regular red tomato for lycopene as I am a fiend for it.
 
tried to make a beef and lemon styled rice dish.. do not recommend lemon no go good with beef, much better for a chicken dish. lemon rice with chicken though.. :deviant: i try to test different things until I find whats good & pairs well together.
 
I'm having a healthy salad with blue cheese, shredded cheddar cheese, pumpernickel croutons, shredded carrots, and tomatoes. Unlike @AboutToBustIn who is borderline diabetic and eats sweets.
